Chicken Curry Recipe | ||

Ingredients: Big Onion – 1 pc Garlic -6 cloves Shallots (small red onion) – 2 pcs Cut or roughly chopped the above into small pcs Lemon grass – one stalk cut into about 3 inch length Curry leaves – 10 to 20 leaves Potatoes – 200 grams (cut into cubes) Chicken meat – 800 grams (thigh or breast) Salt – 2 teaspoons or to taste Sugar – 2-4 teaspoons Curry powder – 2 - 3 spoons Turmeric powder – 2 teaspoons Five-spice
powder – 2 teaspoons Mix the above with some water into paste before you add into the curry. Coconut milk – 1 tin (400 ml) (If you want more creamy add 1 more tin & reduce some water) Water – About (800 - 1000 ml) Cooking Oil - 3 – 4 spoons Method: Heat the wok over a medium fire. Add in the big onion, fry for a while, and add in the garlic, small onions, and add in the chicken meat. Fry for about a minute or two. Add in the water . Add the potatoes and all other ingredients. Bring to boil, reduce heat and simmer for about 20 minutes or until the potatoes are soft. Lastly add in coconut milk and simmer for 5 minutes. Taste the curry and if you want hotter, add in more curry powder. Remove the curry leaves and lemon grass. It is a nice curry!Note: You can also add some egg plants.( cut halved lengthways, again cut into 4 cm pieces) I also add some bean curd sticks (Dried Tofu skin - presoaked in warm water until soft). |
